Ceviche of African Catfish
Ingredients for 4 – 6 appetizer servings
400 gr | Filet of African Catfish |
1 peace | Avocado |
1 peace | midsized Onion |
350-450 ml | Lemon Juice (app. 7-10 lemons) |
100 ml | Coconut cream (not coconut milk), e.g., "Coconut Cuisine." Soy Cuisine is also fine. |
| Chili (fresh or dried) |
| Ground nutmeg |
| Salt & Pepper |
1 bunch | fresh herbs (e.g., cilantro or cress) |
| Sesame and black cumin for sprinkling

Instructions
1. Rinse the fish fillets under cold water, pat dry, remove the skin, and cut into 0.5 – 1 cm pieces.
2. Place the catfish pieces in a container, sprinkle with about 1 teaspoon of salt, and cover with enough lemon juice to submerge them. Cover and marinate in the refrigerator for 6 - 7 hours.
3. Meanwhile, peel the onion, cut it in half, and slice into thin strips. Mix with 1 teaspoon of salt, chili, and the remaining lemon juice. Massage and let sit for about 30 minutes (this makes it milder). Remove the onion from the lemon juice and squeeze well.
4. Chop the fresh herbs coarsely.
5. Remove the catfish pieces from the lemon juice and place them in a bowl. Mix with coconut cream and squeezed onion. Season with salt, freshly ground pepper, and a pinch of nutmeg.
6. Cut the avocado into pieces and gently fold in with the cilantro or cress. Sprinkle the catfish ceviche with sesame seeds and black cumin, and serve cold.
Fish Leberkäse
Ingredients for 1 loaf pan (20-25 cm)
500 g | Fish fillet |
100 g | Bacon (optional, for a smoky flavor) |
1 | Onion |
2 cloves | Garlic |
2 | Eggs |
150 ml |
Cream or milk |
50 g | Breadcrumbs |
1 tsp | Salt |
1 tsp | Pepper |
1 tsp | Paprika Powder
|
1 pinch | Nutmeg |
1 tbsp | parsley, chopped |
Instructions
- Wash the fish fillet thoroughly, pat dry, and cut into small pieces. If using bacon, dice it as well.
- Finely chop the onion and garlic, then sauté them in a pan until translucent.
- Place the fish (and bacon) along with the sautéed onion and garlic into a blender and puree until smooth.
- Add the eggs, cream or milk, breadcrumbs, and spices, then mix well.
- Transfer the mixture into a greased loaf pan and smooth the top.
- Bake in a preheated oven at 180°C (350°F) for about 45–50 minutes until the Leberkäse is cooked through and the surface is slightly browned.
- Remove from the oven, let it cool slightly, and cut into slices.
